As this Russian-style goose roasts, the apples in the stuffing are transformed into a thick sauce: meat and condiment in one. This makes an excellent holiday meal when served with baked sugared apples and buckwheat groats.

Ingredients

  • 16-pound goose
  • Salt
  • Thyme
  • 3 to 4 large tart apples, peeled, co

Method

Rub the inside of the goose with salt and thyme. Let sit for ½ hour.

Preheat the oven to 450°F. Stuff the goose with the chopped apples and rub the skin lightly with olive oil. Place the goose on a rack in a roasting pan, breast side up.
