Three Russian favorites—fish, horseradish and sour cream—are combined here in an excellent dish that’s easy to prepare. Use horseradish flavored with beets for a rosy glow under the cream.


  • 8 fish fillets, such as flounder or halibut (2 pounds)
  • ½ teaspoon salt
  • freshly ground black pepper


Preheat the oven to 375°F. Grease an ovenproof dish. Season the fish fillets with the salt, pepper and thyme.
