Radishes are all too often relegated to the salad bowl. For a delicious change, try preparing them as a side dish, blanched and then mixed with sour cream and scallions.
Wash and trim the radishes. Bring the water to a boil with salt and cook the radishes for about 4 minutes, until tender but still firm. Drain. Stir in the sour cream, chopped scallions and salt to taste, mixing well. Serve immediately.
