Lemon juice and apple jelly dress this healthy, vitamin-rich salad. Those who are more indulgently inclined can fold in a little whipped cream before serving.

Ingredients

  • ½ pound white cabbage, finely shredded
  • ½ green bell pepper, very finely chopped
  • 1 cup

Method

In a large bowl mix together the cabbage, green pepper, celery root, rutabaga, apple, and cucumber.

In a small bowl stir the lemon juice into the apple jelly. Pour this mixture over the vegetables. Season to taste with salt and pepper.

Either serve the mixture as is, like coleslaw, or fold in the whipped cream. Serve immediately.
