In Russian, a staryi khren, literally “old horseradish,” refers to a person who has been through a lot but has not lost his sharp bite. When properly refrigerated, this tangy homemade horseradish will retain its bite for up to several weeks.
Peel the horseradish root. Grate it coarsely by hand, then place it in a blender or food processor along with the vinegar and salt. Grate it very finely, until a fairly smooth puree has been formed. Let chill at least 2 hours before using.
