Method

Just as Russian tvorog is unique, so is Russian sour cream. The commercially prepared product we usually buy bears only a superficial resemblance to it. The difference is in both texture and flavor. True smetana will not clump when added to hot soups, such as borshch; nor will it ever overwhelm a dish. Although commercial sour cream may be substituted in most of the recipes
