Lobio means “bean” in Georgia, where the legumes are put to imaginative use. Here is a streamlined way to prepare kidney beans with a sweet plum sauce.

Ingredients

  • 1 cup small dried kidney beans
  • 1 clove garlic, cut in half
  • ¼ te

Method

Soak the beans overnight in ample water to cover. The next day, drain and cover them with fresh water. Bring to a boil with the halved clove of garlic, ¼ teaspoon of red pepper, ¼ teaspoon of salt, the bay leaf, and the 2 tablespoons of vinegar. Simmer until just tender, about 1 hour. Drain.
