The Russians have a notorious sweet tooth, and even a cup of tea must be accompanied by jam at the very least. Happily, this craving for sweets has produced a wonderful variety of tea cookies and cakes, such as the cookies below, simple to prepare and rich with butter.


  • ¼ cup unsalted butter
  • ½ cup sugar
  • 1 egg


Preheat the oven to 375°F. Cream the butter and sugar together until light and fluffy. Beat in the egg and vanilla extract.

Sift together the dry ingredients and add to the butter mixture, mixing well.
