Rogaliki, “little horns,” are a specialty of southern Russia and Ukraine. This recipe was given to me by a motherly woman named Margarita, who throughout my stay in the Soviet Union kept trying to fatten me up with goodies from her kitchen, such as these excellent pastries stuffed with sugar and nuts.
In a medium bowl mix together the flour and the yeast. Cut in the butter until the mixture resembles coarse meal. Stir in the egg yolks and sour cream and with your fingers mix until the dough holds together. (The less you work this dough, the more tender it will be.) The dough will be sticky. Shape it into a ball, wrap in waxed paper and refrigerate for at least 2 hours.
