Our father learned this from his mother who would make it for him on winter afternoons (adding lots of garlic and chilli) as a quick and warming snack. It’s called ministra in Hebrew but it’s more of a tomato broth with pasta and potatoes than minestrone. We’ve even started serving it sprinkled with parmesan which makes it super-delicious.
