We’ve got our everyday soups at Sababa and then we’ve got our ‘special soups’, which are more concentrated. This is definitely ‘special’ because it takes a lot of tomatoes but only makes a small quantity. Roasting the tomatoes maximises their sweetness and the soup is delicious served with a fresh basil purée and toasted ciabatta.

Ingredients

  • 1 kg Rosa tomatoes
  • 1 kg Roma tomatoes
  • 2 red peppers

Method

Preheat the oven to 180°C.

Mix the tomatoes, peppers, onions, chilli and garlic with the olive oil and pinch of salt and pepper. Transfer it all to a baking tray and roast the vegetables in t
