This is my personal recipe, but very much in the Libyan tradition of slow-cooking and one-pot meals. In winter we make many stews using different combinations of vegetables and this is an example of one of them.


  • 2 onions, diced
  • 125 ml sunflower oil
  • 1.2 kg chicken


Soak the haricot beans overnight in three times the amount of water.

In a large shallow pot, fry the onions until soft and golden brown. Add the chicken strips and continue frying until the chicken is golden on the outside.
