This is my personal recipe, but very much in the Libyan tradition of slow-cooking and one-pot meals. In winter we make many stews using different combinations of vegetables and this is an example of one of them.

Ingredients

  • 2 onions, diced
  • 125 ml sunflower oil
  • 1.2 kg chicken

Method

Soak the haricot beans overnight in three times the amount of water.

In a large shallow pot, fry the onions until soft and golden brown. Add the chicken strips and continue frying until the chicken is golden on the outside. Add the tomato paste and continue cooking for 2 minutes. Then add the salt, pepper, turmeric, paprika, cumin, cinnamon and stock. Lastly add the water and then the g
