Israeli salad is almost always part of our meals. The standard ingredients are: cucumber, tomato, parsley and onion, dressed with lemon juice and olive oil. Some people add spring onions, others add peppers and some add radish. We’ve added everything to ours because Sababa salads are always abundant, colourful and packed with ingredients.


  • 400 g Israeli cucumbers, diced
  • 4 small salad peppers, diced
  • 400 g Rosa tomatoes, diced
  • 4 radishes, sliced
  • 1 red onion, diced
  • 2 spring onions, thinly sliced
  • 1–2 lemons, juiced
  • 60 ml olive oil
  • pinch of salt and freshly ground black pepper to taste
  • handful of Italian flat-leaf parsley, chopped


    Prepare all the vegetables. Just before you are ready to serve the salad, add the olive oil, lemon juice, salt, pepper and parsley. Toss and serve.
