Ingredients

  • 250 g small brown lentils
  • 1 cucumber, cubed
  • 2 red peppers, cubed

Method

Cook the lentils in 3 times the amount of water until they are just cooked. Be careful not to overcook the lentils as they will taste chalky.

Once they have cooled down completely, add the rest of the ingredients. Mix everything together well and serve.
