Here blanched cauliflower, broccoli, cucumber and mangetout are almost pickled in a lemon dressing.
Blanche the broccoli, cauliflower and mangetout separately. Peel the cucumber and cut into long chunks.
To make the dressing combine the lemon juice with the olive oil, salt and pepper.
To assemble the salad, mix the blanched vegetables with the cucumber and dressing.
Plate the vegetables and decorate with the spring onion slices.
