This Gujarati vegetable cake can be eaten warm or cold, and is lovely with a cup of hot Chai at teatime or as a snack. With a blend of rice and dal, vegetables and spices, it strikes the perfect balance of goodness.
Rinse the rice and chana dal together in a sieve under cold running water, then place in a saucepan, cover with water, and leave to soak for 6 hours or overnight.
Once soaked, drain and discard the water from the rice and dal and place them in a blender or food processor. Blend together to form a paste, adding a little water if it’s too firm.
