This soup is incredibly simple to make, but is brimming with protein and nutrients. It’s the kind of staple you will want to enjoy at least once or twice a week, especially on those colder days, as the grated ginger and ground turmeric are wonderfully warming. For a heartier meal, I like to add a few spoonfuls of plain cottage cheese.
In a sieve, rinse the mung beans under cold running water, then place them in a saucepan. Add the measured water and salt, then place over a medium heat and bring to the boil. Boil for about 45 minutes, until soft, checking and adding more water if necessary.
