  • 200 g (7 oz/1⅔ cups) millet flour, plus extra for rolling

Method

Place the millet flour and salt in a mixing bowl and slowly add the water, using your hands to bind and knead it together. Knead the dough for a few minutes until all the water is absorbed and it is no longer sticky. If it stays sticky, add a little more flour. If too dry, add a little more water.

Preheat a tava or frying pan (skillet) on a medium–high heat. While the pan is warming up,
