This dessert will hit you with the wonderful combination of sweetness, spice and sourness. The tanginess of the pineapple comes through the maple syrup sweetness, with a good kick from the chilli flakes. Rather than serving it with ice cream, I like to add frozen coconut yoghurt, mixed with saffron and a dash of maple syrup, then sprinkle sweetened walnuts over the top.
