Pour the almond milk into a glass or bowl and add the saffron so that the saffron infuses in the milk. Set aside.
Melt the coconut oil in a saucepan, add the amaranth flour and cook, stirring over a low heat for 10 minutes until it turns golden brown. Add the almond milk and saffron mixture, the honey and ground cardamom and stir for 5 minutes until everything is soaked up.
