Method

Preparation

Cut the papaya in half and remove the seeds. Peel the papaya and cucumber, then dice the flesh. Finely chop the basil and the fresh breadcrumbs.

Combine the papaya, cucumber, basil and breadcrumbs in a bowl. Add the olive oil, red wine vinegar, red nokoss, stale baguette and a pinch of salt. Mix and leave to marinate for 24 hours.

Keep a few pieces of papay
