  • 1 red onion

Method

Preparation

Peel and finely dice the mangoes and onion. Cut the tomatoes in half and finely dice. Finely chop the herbs.

Roughly crush the cashews.

Zest and juice the limes into a large bowl, then mix in the green nokoss. Season with salt and pepper.

Rinse the fonio several times in clean water. Steam the fonio in a couscoussier or muslin-lined steamer for 15 m
