Soak the cod in a large bowl of cold water overnight or for at least 8 hours to desalt it. Change the water regularly.
Cook the eggplant in salted boiling water for 20 minutes. Leave to cool, then remove the stems and peel the eggplant. Cut the eggplant in half and set aside in a cool place.
Drain the cod, then scale it and cut it into pieces.
