To peel the plantain bananas, cut off the two ends, then use the tip of a knife to score the skin along the length of the banana from one end to the other. Remove the skin. Using the back of a knife, gently scrape the flesh to remove the thin bitter layer. Cut the bananas in half lengthways and remove the heart.
Peel the cassava with a knife, cut it in half lengthw
