Preparation

Break the eggs into a bowl, add the sugar and whisk until the mixture turns whites and frothy. Add the evaporated milk, red palm oil, orange flower water and salt, then whisk until the mixture is smooth.

Add the cornmeal and baking powder, then use your hands to knead the mixture into a sticky dough. Set the dough aside for 30 minutes.
