Saltwater Taffy

Saltwater taffy is one of the best parts of a beach vacation. We used to come home with boxes of it—none of which lasted more than a few days! Taffy must be cooked to a precise temperature to achieve the perfect chewy texture. Undercooking will give it a soft, unworkable consistency; overcooking will yield a candy too hard to be called taffy. After it cooks, taffy must be pulled to get that volume.
