Ingredients: 1 small papaya (or ¼ melon), cut into 1 cm/½ in. dice; (a little) salt and freshly ground black pepper; salt and freshly ground black pepper; 2 small green chillies, chopped; juice of 2 limes and the grated zest of 1; 4 tbsp olive oil; 1 cos lettuce, roughly shredded; 2 avocados, cut into 1 cm/½ in.dice; 50 g/1¾ oz. generous ¼ cup (or so – does anyone actually weigh olives?) black olives; 3–4 hard-boiled eggs, peeled and quartered; 2–2½tbsp white wine vinegar; 1good tsp grainy mustard; 2 shakes of Worcestershire sauce; 2 sprinkles of Tabasco; 2 handfuls (about ½ bunch) of fresh coriander (cilantro), chopped; 1 can (450 g/1 lb.or thereabouts) palm hearts; 1 small can anchovy fillets (about 8–10), roughly chopped; 2 medium avocados, cut into rough chunks; 50 g/1¾ oz. scant ½ cup grated Parmesan; 2 garlic cloves, minced; 3–4 lovely tomatoes, halved and sliced; 1 medium red onion, chopped; ½ cucumber, cut into 1 cm/½ in.dice; 4–5tbsp olive oil
