This is a naughty but nice recipe – although, as Yuki says, the weight-conscious among you could always steam the aubergines instead of frying them. Black sesame has a more intense flavour, but you could use easier to find white sesame.

To get the best flavour and max the nutritious value of the dish, great care needs to be taken when grinding the sesame. Now I am rarely prone to gadget envy, even of the kitchen variety. But when Yuki showed me her grandmother’s special sesame-grind
