This is a twist on a dish popular in many countries. A sort of posh potato salad, it undoubtedly originated in Russia (it was devised by Chef Olivier around 150 years ago) – the Spanish call their version ensaladilla a la Russe, while over in the UK you might know it as Russian salad.
