Bavarian-Style Kartoffelsalat

Kartoffel is just a very grand (albeit slightly cartoonish) word for potato. This is potato salad with wally, though: piquant and with lashings of hidden bacon. And I am sure you agree that everything tastes better with hidden bacon (unless you happen not to eat pork, of course). This makes a great lunch box filler or side dish – but lob in apple and cheese as optional extras, and it becomes a (slightly naughty autumn) meal already.
