I’ve always felt that green beans need quite a lot of help to taste good – like so many prom queens, they look pretty and pert enough, but lack substance when push comes to shove. And when over-boiled, they can taste wretchedly watery. This very simple Italian treatment takes them from plain (tasting) Jane garden staple and raises them to a tongue-titillating Tuscan (or thereabouts) temptress of a salad.
