I can’t figure the hold that these mild-flavoured and somewhat slimy beans have on me: perhaps it’s the delicate green colour. But I love them and often have them for lunch with just a little lemon, onion and garlic. They are truly at their best in salads – and they are readily available pretty much everywhere now so there is no excuse. This, then, is my very French day trip salad.
