Wholegrain bulghur wheat was a revelation to me: it does taste super-nutty, and holds its texture without being too ‘crunchy’ (euphemism for ‘resolutely refuses to cook’). If you are fond of a post-prandial snooze at your desk, best leave this one alone: the added fruit, nuts and seeds make this a nutritious salad that will give you enough energy to sail through the afternoon.
