This is another salad evolved during my ‘back in five minutes’ shop lunchbreaks. Peanut butter is full of protein and has a healthy oil content, so although it feels like naughty food, it is good for you. Which is just as well considering my intake.

You can use leftover cooked rice for this (especially if you are on a five-minute lunch break), but it is all the better for using a chewy, nutty rice. Black rice (also known as forbidden rice – which is an apt name as my Iranian family-
