Salt cod (or bacalao) was a mystery to me until I spent a rogue year pretending I could cook for a living in Spain. I would hazard a guess that it is also a bit of a mystery to you: it is simply not something that enters our heads when we’re pondering the universal dilemma of WHAT ON EARTH TO COOK FOR DINNER. Which is a shame as it is now readily available, cheap and very tasty.
