Ingredients: 1 perfectly ripe avocado, sliced; ½ tsp English mustard; 80 g/3 oz. generous ⅓ cup butter, cubed and chilled; 1 fat live lobster (600–700 g/1¼–1½ lb.is ideal), or equivalent cooked; salt; big handful of fresh coriander (cilantro), chopped; 200 ml/7 fl oz. generous ¾ cup water; ½ tsp cayenne; 75 g/2¾ oz.assorted salad leaves; juice and grated zest of 2 limes; handful of fresh basil, chopped; ¼ tsp ground saffron
