‘Steak and Chips’ Salad

Just to prove to your carnivorous best beloved that salad never means having to say you’re sorry. There are, of course, some unswayable types for whom steak is only steak if it comes in sizzling slab format, but for the rest of the world this is a slightly healthier/funkier option.

Ingredients

  • 2 medium fluffy chipping potatoes (King Edward or Maris Piper)
  • 1 small beetroot

Method

Peel the potatoes and beetroot, cut them into very thin chips (AKA French fries) and place them in a bowl of cold water for about 10 minutes.

Meanwhile, preheat the oven to 220°C/425°F/Gas mark 7 and line a baking tray with some oiled parchment paper.
