I have never figured the strangely addictive nature of ricotta: it is to all intents and purposes tasteless, and yet one spoon is never enough. Because of its capacity to swing both ways (sweet or savoury), not to mention the fact that as cheeses go it is very low fat, it is a useful ingredient to have in your fridge for last-minute creations. This composed dessert salad takes 5 minutes tops to make.
