Borani in Farsi refers to a dish of cooked anything with yogurt. It gets its name from one Queen Pourandokht, who seemingly had a serious yogurt habit. This recipe, with aubergines, is one of the most popular versions thereof.

Ingredients

  • 2 medium aubergines (eggplants)
  • 2 medium onions, peeled
  • 3–4 garlic cloves
