Method

Everyone knows how to make guacamole, so I’ll keep it brief. This wondrous concoction was being enjoyed by the Aztecs hundreds of years ago in Mexico, but is now pretty much a staple in every TexMex burger joint across the globe. Mash the ripe avocados with the tomatoes, coriander, chillies, plenty of lime juice and some salt to taste: resist the temptation to use a blender, as guacamole should
