With the rising popularity of Middle Eastern food, it seems the Middle West has gone dip mad. Of course we have guacamole, and cream cheese with chives, and aïoli, but the genre really belongs to the Eastern end of the Mediterranean. This is my attempt at balancing things out. It doesn’t get more British than Marmite and cress. (Ignore the fact that I’ve bulked it out with Italian cheese).
