  • Grated zest and juice of 1 lime

Method

In a bowl, combine the onion, lime zest and juice, and salt and mix thoroughly with your hands, massaging the lime juice into the onion. Pack into an airtight container, making sure the onion slices are submerged in the lime juice, and let sit for at least 1 hour before using. The pickled onion will keep in the refrigerator for up to 1 month.
