These battered and fried potatoes, which are in the style of British fish-and-chips shops, are insanely delicious with caviar. They are best when eaten immediately after they emerge from the hot oil, so we like to have everything else involved with our caviar service ready before we begin the final frying. If you don’t feel like frying, you can grab some blini or toast points at most shops that offer a fine selection of caviar.
