Yup. You guessed it. This beer batter is made to be light and crispy. We recommend preparing it just before it’s fry time and whisking it every few minutes as you work to keep it well mixed. You’ll notice that it is thinner than you’d expect, and that’s what makes it so light and crispy. This batter is best for frying flaky white fish fillets weighing 4 to 8 ounces.
