Taking inspiration from the Punjabi delicacy, Amritsari Fish, these golden artichoke pakoras are soft and flaky on the inside. Use canned artichokes in water for the quickest version but be sure to give the hearts a gentle squeeze between kitchen paper to remove any excess moisture. Jarred artichokes in oil will need to be drained, rinsed well and patted dry prior to using.
