For those who like their mac obscenely cheesy, this bubbling dish of pasta and three-cheese Madras sauce is topped with a crunchy, garlic and coriander (cilantro) naan crumb. A supreme way to use up leftover naan. If you don’t want to make this mac right away, blitz any naan scraps you have, allow them to air dry on a baking sheet (or do it in a very low oven for an hour) and bag them up. Stash them in the freezer until you’re ready to turbo charge any gratin-style dish.
