Here’s a new way of serving a simple Gujarati side dish. Between the layers of crispy filo (phyllo) pastry is a mixture of cabbage and carrots stir-fried with mustard seeds. Sambharo is typically eaten as an accompaniment with roti, or for breakfast alongside gathia (long gram flour snacks) and jalebi (sweet and swirly sweets (candies)). I make this when all I want for dinner is a plate of spring rolls but feel like doing none of the fiddly folding and frying.
