A warming, spiced take on bolognese, made with robust black chickpeas (kala channa). These are typically smaller than white chickpeas (garbanzo beans), with a nuttier flavour and more robust texture which is largely down to their thicker skins. Canned black chickpeas work well and save time, but feel free to soak and cook dried black chickpeas, if you wish.
