The squeakiest chaat there ever was. Pan-fried halloumi doused with masala yogurt, tamarind chutney, spicy coriander (cilantro) and mint chutney, onions, crunchy sev and juicy bursts of pomegranate makes this dish the definition of a party in your mouth.

Ingredients

  • 250 g (9 oz) halloumi, cut into thick fries
  • 2 tbsp cornflour (

Method

  1. In a bowl, whisk up all the ingredients for the masala yogurt. Cover and refrigerate until required. This can be done up to 24 hours in advance.
  2. Toss the halloumi fries in the cornflour (cornstarch). Heat the oil in a non-stick frying pan (skillet) and fry the halloumi fries on all sides until golden.
  3. Arrange the halloumi fries in a bowl or on a plate
