Deeply spiced and smoky keema is the equivalent of a weighted blanket for baked potatoes. Soya mince is my go-to substitute for traditional minced (ground) meat, although a mashed-up block of firm tofu also works well. Give the spuds a head start prior to going into the oven by microwaving just until they begin to soften up.

Ingredients

  • 4 large baking potatoes
  • 3 tbsp oil
  • ¼ tsp salt

Method

  1. Preheat the oven to 220°C/200°C fan/425°F/Gas mark 7.
  2. Wash the potatoes and leave them a little damp. Prick the skins all over with a fork and microwave on high power for 10-12 minutes, or until they’ve softened up a bit.
